Breakfast Recipes

The children are cereal-eaters for breakfast, but when we run out or when I want to fill them up a bit more I make something generally out of oats for us. (I use date syrup in place of honey or a syrup we can't get here.)

French Toast Casserole 
5 cups bread cubes
4 eggs
1 1/2 cups milk
2 tsp sugar
1/4 tsp salt
1 tsp vanilla
1 tsp butter
1 tsp cinnamon

Line greased oven dish with bread cubes. In a bowl, beat together eggs, milk, sugar, salt and vamilla. Pour over bread and dot with butter. Let stand for 10 minutes.
Sprinkle cinnamon on top. Bake for 30-45 minutes until golden.

This pumpkin breakfast casserole is SO good! Next time I'll need to make double the amount- it all went in a jiffy!

Pumpkin Smoothie When I have a pumpkin to use up I'm always looking for things to do with it. This proved a popular breakfast with everyone. I omitted the protein powder (what's that about anyway?) and added oats and more milk to bulk it up a bit.

Banana bread baked oatmeal : this is one of our favourite breakfast recipes. I make it in the evening, add the baking powder in the morning then bake it in 30 mins. It says it serves 6 but that's not enough for our hungry family so it's best doubled.

allbrancake It was exciting to find All Bran here which makes a great breakfast loaf (I reduce the sugar and use stewed apple instead of dried fruit which is really expensive here)

ohsheglows is a wonderful website with lots of healthy recipes. I like her carrot cake oatmeal which I use as an apple bake too- substitute the carrot for apple.

I like making this apple oat bake but I bake it in a tray rather than as separate muffins. I don't use sugar, just a little date syrup.
