Kardeh


Yesterday the girls and I were invited over to a  neighbour's house to make kardeh/kooliche (pastries). It was a very happy time, I'm so thankful to God for arranging it at just that time as it was good for the girls to spend time with their friend A. 

We spent 2.5 hours making piles of kooliche. It was a good time for chatting and getting to know them better. Some ladies are really fussy about letting you help- if you don't make it perfectly they won't let you do it, but this family was very relaxed and encouraged us to be creative and make all sorts of fun designs. We then took a big bag home with us!

1. Crush the walnuts with pestle and mortar
2. Add sugar & ground cardamom to the walnuts

3. Heat dates to soften, with some oil and cinnamon
4. Make little balls with the dough
5. Roll the ball flat
6. Put dates on the dough, roll up and cut into slices then flatten. Or with the small balls, add the dates and shape into different designs.
7. Brush with egg

8. Add the walnut mixture to other circles of dough
9. Secure with a pattern at the top
10. Cook in the oven until brown
